Who? Totem are Klaas and Liesbeth, a down-to-earth couple that makes bold, inventive and delicious beers in Evergem, near Ghent. They make Belgian beer in a way that most Belgian brewers simply wouldn’t do it.
Why us? Liesbeth is a former colleague of ours in Brussels, who regularly told stories during lunch breaks about home brews and kettles bubbling away in the back room. So we’ve known Totem from long before it was Totem!
Kristof’s favorite beer: “The Hallertau Blanc Saison at 4.5%. They always brew great beers and are very creative. Hallertau Blanc is a fine and delicate hop, which also fits nicely in a saison.”
Joos’ favorite beer: “The Carrot Cake Sour, an 8% pastry sour with carrot. That beer is so satisfying: you hardly see anything like this at other breweries, and it brings a wonderful freshness with its summery color and intense taste.”
